A Family Practice with a Gentle Approach Now part of the Lumino Group From cop to chef in tuna town cafe Master Chef contestant: Daniel Bristow is changing cuisine at Moerewa's Tuna Cafe. By EMMA GODWIN Taking on a new busi- ness when worldwide economic meltdown is threatening may seem like sheer madness to some but ex-cop Daniel Bristow's experience on MasterChef New Zea- land has given him the confidence to tackle the challenge. Daniel got 13th place in the first season of the top-rating TV show and says the experience was a real eye-opener. ''It gave me the confi- dence in myself as a chef and when the oppor- tunity came up to take over the Tuna Cafe in Moerewa, I jumped at the chance,'' Daniel says. Daniel, born in Kawakawa, is no stranger to Moerewa. His father owned the Blue Lagoon Dairy. Fol- lowing 15 years on the force in Wellington, Daniel returned north and has worked as a hygiene supervisor at Affco meatworks for the past couple of years. ''Moerewa is a special place to me. The cafe space here is great; there's a good atmos- phere, garden seating and the carving school and gallery next door.'' One of Daniel's sump- tuous recipes -- Mars bar chocolate souffle ´ with raspberry coulis and cre ` me fraiche -- that won him a place on MasterChef is not likely to feature on the menu. ''The theme for the cafe is tuna town. I am bringing back the old dishes from our area as well as introducing new takes on traditional Maori cuisine. ''With the cycle trail coming through our town, we'd like to offer people a unique adven- ture and provide them with a memorable dining experience.'' Tasty morsels on offer include Kumera Kao, a kumera rosti with poached egg and hollan- daise, smoked tuna (eel), mutton bird and the local classic, Motown beef. ''We will still offer standard cafe fare.''
